Allison Brown is a Ph.D. candidate studying a dual-title degree in Food Science and International Agriculture and Development at Penn State University. She earned a Bachelor of Science in Food Science from the University of Illinois Urbana-Champaign, and then received an Accelerated Culinary Arts Certificate from the Culinary Institute of America at Greystone. After working in the wine industry, she switched her focus to cocoa and chocolate and earned a Master of Science in Food Technology from Wageningen University in The Netherlands. With her PhD research, she uses sensory science and chemical analysis to characterize the flavor of cocoa liquor produced from different varieties of Theobroma cacao.
